  1. Sounds like it was a fun process. And it distracted you from your hormone change induced weepyness.
I made a “massaged” kale salad for the first time on Sunday. It contains freshly cut mango, chopped almonds (I didn’t have the pine nuts the recipee calls for. You finely chop a good bunch of kale and put in large mixing bowl. In separate container mix juice of one lemon, with 2 tsp of honey, and 1/4 cup olive oil, add about a tsp of salt, grind some pepper into it, and slowly pour 1/2 of it over over the kale. Then, applying a little pressure, you massage the kale-dressing mixture with your hands for about 2-3 minutes. Then you add a cup of cut up mango, the nuts, and then the rest of the oil-lemon-honey mixuture. Then you leave it in the refrigerator for 2 days before eating it.

We had some last night. It wasn’t quite as good as when Jo made it. I may not have massaged it hard enough. Also since I did not have a fresh lemon and had to use bottled lemon juice, it did not have the right amount of zing, and the mango was not fully ripe, so it lacked some sweetness. But for a first try, it came out well
